Lola's dinner last night.
Simple but good - buttermilk fried chicken, steamed broccoli, carrot sticks, and new potatoes from Bruno's parents garden roasted with garlic and rosemary.
This is the second time I've made the chicken, and it's damn good. The kiddies love it, and it's pretty simple to make.
Buttermilk fried chicken (adapted from The Cook's Book)
2 skinless chicken breasts, sliced into strips
1 Tb Dijon mustard
Pinch paprika
1/2 tsp salt
1/tsp freshly ground pepper
150 ml buttermilk
cornflakes, crushed to smithereens for crumbing - a couple of handfuls at least
fresh white breadcrumbs - a handful
sunflower oil for frying
How
- Mix together the mustard, paprika, salt, and pepper, then coat the chicken with the mixture. Pour over the buttermilk and leave for a few hours, or preferably overnight in the fridge.
- Heat oil to depth of about 1cm in a deep pan. Don't get the oil too hot - if it smokes it is too hot (add some fresh oil to lower the temp), but conversely the oil shouldn't be too cold as this will result in soggy, oily chicken (yuck). A few crumbs of cornflakes dropped in should sizzle.
- Mix the cornflakes and breadcrumbs together well.
- Lift the chicken pieces out of the buttermilk mix one by one and coat well with the cornflakes and breadcrumbs.
- Lower into the hot oil carefully - don't overcrowd the pan. You may need to do this in two batches. Cook chicken for about 10 mins (depending on the size of your peices - mine were quite thick) until golden brown and crispy, turning once.
- Drain on absorbant paper when done.
- Keep finished pieces warm while you cook the rest of the chicken.
- All manner of things go well with these crunchy yummies - a big green salad, steamed veges, roasted potatoes etc etc. Go for something fresh and light to counteract the fried business.
Being fried, you wouldn't want to have this chicken everyday, but it's a nice treat when you want something delicious that you know yr kids will eat - it's always a winner, trust me!
